On Saturday 1st September we hosted another of our Gin Tasting Nights, this time featuring Darnley's GIn. The Darnley's Gin distillery is very local to us; just a 15 minute drive from our restaurant in St Andrews, based out at Kingsbarns. Their award-winning range of gins cover all bases for gin lovers with flavours and aromas of floral, citrus & spice and made a great match to the seasonal seafood menu we had created. The menu was totally delicious featuring lobster, not once, but TWICE - our diners were totally spoilt! The lobsters were Scottish, caught locally in Arbroath by our seafood suppliers (G & A Spink Fish Merchants) good friend, Neil Teviotdale, and were incredibly fresh & sweet tasting. Also featured on the menu were scallops, seabass and a decadent chocolate tart; a real feast! As per usual, we looked at the ingredients in the dishes and the botanical in the gins and matched them up, bringing out their brightest notes with our gin garnishes. Stand out dish of the night - Lobster salad with apple & truffle mayo! So fresh and zingy - went perfectly with Darnley's "In The Garden" cocktail. See the recipe from their website below: What we were most excited to try was Darnely's new release Very Berry Gin; a limited edition from their Cottage Series range. Its signature botanicals include sloe berry, rosehip & elderberry which grow close to the distillery at Kingsbarns and also sugar kelp which is sourced from the nearby coast line. The result, a delicious, versatile gin with notes of sweet berry and a salty, floral aroma. We paired this with a honey and a rock salt rim to really enhance the botanicals inside the gin and served it alongside seared scallops, parsnip puree, bursts of boozy golden raisin puree & parsnip crisps - delightful! On Sunday 2nd September we visited Dundee Flower & Food Festival at Camperdown Park. Our Head Chef, Matthew Hebdon did a demonstration in the main tent in front of hundreds of visitors where he prepared a Mackerel Tartare dish. See the delicious recipie below:
